The olives and production
The excellent extra virgin olive oil is obtained exclusively from the prestigious “Coratina” and “Peranzana” variety of olive, selected and processed by the classic method of cold-pressing. The olives are pressed with granite grindstones whose slow rotation produces the perfect homogeneity of the pulp, which is subsequently processed in a continuous cycle using state-of-the-art equipment. From it we derive an oil with very low acidity and with incomparable organoleptic characteristics.
Thanks to the presence of phenolic compounds, phospholipids, liposoluble vitamins and the balance of saturated, unsaturated and polyunsaturated acids, Antico Frantoio Muraglia extra-virgin olive oil possesses outstanding health-promoting properties. It is extremely easy to digest, protects against liver and heart disease and resists the formation of free radicals. It also assists in keeping down the level of LDL (the harmful cholesterol).
The extra virgin olive oil from the Antico Frantoio Muraglia is subject to the rigid regulation of the “Protected Designation of Origin Terra di Bari - Castel del Monte” and “100% Prodotto Italiano”, to guarantee that everything is done in the area of origin from the cultivation of the olive trees through the bottling process.
