Pastificio del Colle's high quality pasta is produced using first rate Apulian durum wheat semolina, thoroughly mixed with warm water in a steel kneading machine.Then the dough, softly pressed forward, passes through the traditional round bronze dies. Finally the pasta is of the desired texture necessary to hold the sauce better, and is slowly dried at low temperatures.
Pasta is differently coloured by means of natural food dyes added to the dough: tomato for red or paprika for orange; turmeric for yellow; beetroot for violet or pink; sepia for black; spinach for green. All food dyes are natural product with no additives.
