While there are some overtones of a fine balsamic, aceto di vincotto must never be confused with balsamic vinegar. Aceto di vincotto has a unique texture and flavour profile. Aceto di vincotto is made from 100% grape must combined with vinegar produced from the same grape varietals. Aceto di vincotto has no added sugar and contains no colouring or preservatives.
The original vincotto is sweet in flavour and luscious in texture. Blending it with the wine vinegar produces a delightful sweet and sour condiment with a delicate flavour of figs.
This is a versatile condiment and can used over roasted meats, carpaccio, grilled fish, soups and salads.
