Mulino Caputo is one of the worlds most highly regarded flour millers and producers. Semolina flour (Semola di Grano Rimacinata) is milled from the cleaned endosperm (or heart) of durum wheat. Durum wheat is regarded as the best as it is “hard” or high in protein or gluten.
Caputo Semola Rimacinata is milled several times to make it a fine grain, perfect for use in fresh pasta and bread recipes. The flour is amber in colour, and is a good alternative to corn meal in baking.
The flour holds very well and produces a high-end pasta dough.
