Manchego cheese is an artisan sheep's milk cheese cured for about 3 months. In the tradition of all Manchego cheeses, this cheese is rubbed with oil to give it that smooth texture and distinct taste. It has a great mild flavour, subtle aroma and a pleasantly mild spiciness.
Manchego is Spain's most famous cheese. Produced in La Mancha in Central Spain, true Manchego is made from 100% sheep's milk. The abundance of wild herbs on Central Spain’s grazing lands gives Manchego a special taste and aroma. Its flavour is zesty and exuberant while its texture is firm but not dry. Manchego is prized for its rich, complex flavour and its satisfyingly grainy texture.
Traditionally, it’s served with membrillo and marconas, or maybe some Serrano ham. However, Manchego, with its fullness and fatty backbone, is a versatile pair for many red wines and fuller bodied whites. Some suggestions for its incorporation include in Mac & Cheese, sandwiches, salads, and even pies. Manchego makes an excellent melter and works wonders with all types of egg dishes. However, there’s nothing quite as memorable as trying it on its own, perhaps on a cheese board or as part of a decadent grazing platter.
