Taleggio is a semisoft, washed-rind, smear-ripened Italian cheese. It cheese has a thin crust and a strong aroma, but its flavour is comparatively mild with an unusual fruity tang.
Named after the valley of its origin, Val Taleggio, it is tradition incarnate. It's coarse rind is edible, and stands in great contrast to the creamy interior. Together, they create a seamless blend of opposing sensations in terms of both flavour and consistency. The outcome is smooth and slightly acidic.
